Triple Chocolate Brownies



  • 200g unsalted butter
  • 200g dark chocolate
  • 3 medium eggs
  • 250g caster sugar
  • 112g plain flour, sifted
  • 50g chopped white chocolate
  • 50g chopped milk chocolate
  • 50g chopped dark chocolate
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla essence


  1. Preheat oven to 170 degrees centigrade and line baking tin with baking paper
  2. Using a bain marie, melt together the butter and chocolate, then set aside to slightly cool
  3. Using an electric whisk, whisk together the eggs and sugar for 2-3 minutes until pale
  4. Add the slightly cooled melted chocolate mixture and mix well
  5. Add the sifted flour, salt, chopped chocolate and vanilla essence and combine well
  6. Pour into the tin and bake for 25-35 minutes


If you like your brownies really swidgy and gooey, take them out them they are still slightly wobbly in the middle, approx. 25 minutes

If you prefer your brownies a bit more cakey, wait until the brownie doesn't have a wobble in the middle, approx. 35 minutes
